Prepare a piece of fat and lean pork belly.

Cut into cubes.

Boil the water in a pot under cold water and add the onion, ginger and cooking wine. Wash off the scum on the surface and set aside.

Heat the pan with cold oil and stir-fry the sugar over low heat until it becomes caramel color and has dense bubbles.

Add the meat pieces and fry for a few minutes. Add light soy sauce and dark soy sauce, stir-fry slightly until coloured.

Add onions, ginger, garlic, star anise, cinnamon, bay leaves, and water to cover the meat, bring to a boil over high heat, then reduce to medium to low heat and simmer for twenty minutes.

After twenty minutes, pick out the onions, ginger, and garlic, add salt, and continue cooking for another twenty minutes.

Remove the juice over high heat.
