It’s rare to see bamboo shoots in Wuzhishan. I bought one when I saw one today. I didn’t realize it was a bitter bamboo shoot until I got home. After asking Du Niang, I found out that bitter bamboo shoots are also called sweet bamboo shoots and cold bamboo shoots. It has the effect of losing weight and preventing constipation and colon cancer. Traditional Chinese medicine believes that bitter bamboo shoots are sweet, light, slightly bitter, and cold. It has the functions of clearing heat, diuresis, promoting blood circulation and dispelling wind, and can treat rheumatism, food accumulation, cough, sores and other diseases.

Peel off the skin, wash and slice into pieces, put in a pot under cold water, boil for three minutes, remove and drain.
