Cold Eggplant
Overview
Cold dishes are a delicacy that cannot be ignored on the dining table. Even if it is a vegetarian dish, it is delicious when served cold. Eggplant salad is one of my favorite cold dishes. Simple, delicious and appetizing, you won’t be afraid of gaining weight if you eat more. Eggplant is rich in nutrients, including protein, fat, carbohydrates, vitamins, calcium, phosphorus, iron and other nutrients. Prepare ingredients: eggplant, garlic, red pepper, chives, etc.;

Wash the eggplant, cut into strips, and soak in salt water for 5 minutes; PS: Soaking in salt water can remove the black color;
