Grilled Eggplant with Minced Garlic Pork
Overview
This is the first time I learned to make grilled eggplant. I added a lot of minced garlic and minced meat, and also added some chili oil. It is salty and slightly spicy!

Wash and dry the large eggplants

Place in the oven and bake at 165 degrees for 15 minutes until the eggplant skin becomes wrinkled

Prepare minced garlic and ginger

Add appropriate amount of oyster sauce, light soy sauce and chili oil

Heat an appropriate amount of salad oil and sauté the minced garlic until fragrant

Mix well and set aside

Add appropriate amount of cooking wine, salt and white pepper to the minced pork and mix well

Cut the roasted eggplant into two pieces and score the meat inside to enhance the flavor

Spread the mixed garlic sauce on the eggplant

Then spread the minced pork evenly on the minced garlic

Bake in the oven at 200 degrees for about 15 minutes

Take it out, sprinkle with chopped green onion and diced red pepper, and bake for 5-10 minutes. Try it with a fork and wait until the eggplant meat is tender
