Tianyuan stir-fry

Prepare materials

Beat the eggs into egg liquid

Cut lotus root, green pepper, and yellow bell pepper into flat pieces

Boil lotus roots in boiling water until medium cooked, remove and drain and set aside

Mix 1/3 tsp salt + 1 tsp each light soy sauce + 1 tsp sugar + 1 tsp water to make a bowl of juice

Heat the oil in a wok until 70% hot. Fry the egg liquid into a skin first, break it up and put it out

Heat 70% oil in a wok, stir-fry minced garlic first, then add lotus root cubes and fungus, stir-fry over high heat for 2 minutes

Add green and yellow peppers and stir-fry evenly, then pour in the bowl of juice and stir-fry evenly

When ready to serve, add the scrambled eggs and stir evenly
