Dry-fried small yellow croaker is made from 50 to 100 grams of fresh small yellow croaker. The fried small yellow croaker has crispy skin and tender meat inside. It is a great side dish to go with wine! It’s also my little master’s favorite!

Remove the internal organs and gills of the small yellow croaker, clean it, add white pepper, salt and cooking wine and marinate for 30 minutes;

Prepare the frying batter. After mixing flour, pepper powder and starch, add cold water little by little to form a batter. Finally, add 5 grams of cooking oil and mix thoroughly (the consistency of the batter is thin, use chopsticks to pick up the batter, and the batter will drip slowly);

Put the marinated small yellow croaker into the batter and cover the yellow croaker with the batter;

Heat the oil in the pot to 50% to 60% hot, add the small yellow croakers dipped in batter one by one, and fry until they turn color (the small yellow croakers just put into the pot will spatter, please pay attention to safety)
