Soak the prunes for at least two hours or the night before. Select the pork belly and soak it for about half an hour to remove the blood and fishy smell

Cut the soaked meat into even thicknesses

First add the white wine and wait for 5-10 minutes, then add in the ginger, salt, light soy sauce, dark soy sauce, peppercorns, and sugar

Marinate for at least half an hour or several hours

Put the meat on the plate with the skin side down

Fry the soaked prunes with more oil and cook with some white wine to remove the astringency

Place the dried prunes on top of the meat and steam over high heat for about an hour

Wear gloves and put it on the plate
