Braised tofu with spicy sauce
Overview
The damn lack of season has come again. After I came to Suzhou, I always felt the air was damp and uncomfortable. My best friend told me to eat more soy products. Actually, I just don’t like tofu. Recently, a lot of friends told me that there were no recipes about soy products, so I had time to study them, so I went to the supermarket to buy them today and started cooking them

Ingredients
Steps
-
It is best to choose old tofu, because the soft tofu will fall into pieces when fried
-
Slice the meat first, then chop it into small pieces. It must be very finely chopped. If you find it troublesome by hand, just use a meat grinder
-
Add a little pepper, light soy sauce, cornstarch, and cooking oil to the minced meat, mix thoroughly with your hands, and marinate for a few minutes
-
Peel and mince ginger and garlic
-
Cut the tofu into small pieces evenly
-
Add oil to the pot and heat until 60 to 70% hot
-
Fry one side until golden brown, then flip over and continue
-
Just do this on both sides and it's ready to go, but don't overcook it
-
Leave a little oil at the bottom of the pot, add ginger and garlic paste and sauté until fragrant
-
Add the marinated minced meat, stir fry together
-
Add a tablespoon of bean paste and stir-fry until red oil comes out
-
Add appropriate amount of hot water
-
Add a little light soy sauce
-
A little cooking wine
-
After the soup boils, add the fried tofu, bring to a boil over high heat and then turn to medium-low heat
-
When the soup is almost the same, add a little salt. You don’t need too much, because the bean paste and light soy sauce are all salty. Add a little chicken powder, add an appropriate amount of water, and pour in starch evenly around the pot
-
Finally, we add the chopped garlic leaves and stir-fry evenly before serving
-
Wow, take one bite, the rich juice is so fragrant, the minced meat and soup inside are perfect with rice
-
Well, I will also study more recipes for soy products in the future
