Burdock soup
Overview
Burdock is also known as Oriental ginseng. Its dietary fiber content is three times that of bamboo shoots. This soup is rich in minerals, vitamins, minerals and up to hundreds of phytochemicals. Wash all vegetables. Pumpkin peels and burdock peels have high nutritional value and should be preserved. Use a toothbrush to scrub the outer skins carefully.

Cut all vegetables into cubes.

Put a little olive oil in a frying pan, add pumpkin, burdock, onion, and carrots, stir-fry until the vegetables soften slightly

Pour in the parsley and an appropriate amount of water. The water should cover all the ingredients. Cook over high heat for 5 minutes. Turn off the heat and let cool.

After the hot soup has cooled down to lukewarm temperature, pour the entire pot of ingredients into the broken-wall food processor and press the fruit and vegetable button to blend for about 2 minutes.

Finally add salt and a little Italian vanilla and it's done.
