Dark soy sauce is used to make the vermicelli a little more colorful and beautiful. You can add it or not. Of course, you can add chicken essence. I don’t have it. It’s a good idea to use whatever you like. I think this dish is best eaten rolled into a small pancake. The roast duck pancake I use is steamed so I don’t have to bake it myself.
