I ate this dish at Cai Ni Yunnan Cuisine. The first time I ate it, I thought it tasted very good and very special. So I researched how to do it. Raw salted duck egg yolk

Red kidney bean soup (please ignore the rice in it. I made the porridge for the baby and put it into the pig trotter soup.)

If you don’t have large coriander (coriander from Yunnan and Myanmar), you can also use ordinary coriander to enhance the flavor.

Blanch the pig's trotters in water, add cooking wine, ginger, remove foam and cook for 1 and a half hours, or use a pressure cooker to cook.

Steam duck egg yolk for 5 minutes.

When the duck egg yolk is half-cooked, you can remove it and add water to make juice.

Put the duck egg yolk juice into the pot, add the pork trotters soup and pig trotters, add red kidney bean soup (mainly more kidney beans, about a tablespoon, the soup can be a little less), add enoki mushrooms (optional), add the juice of four limes, add two chopped chilies, add a spoonful of sugar, a spoonful of salt, a little chicken essence, and bring to a boil.

Remove from the pot and add minced coriander, cut two slices of tomatoes and garnish, cut two slices of lime and garnish (I don’t know if the lime should be added to the soup, but the taste is already very similar.)

The pig's trotters are mainly boiled in water beforehand. If you want the sour soup to be more flavorful, wait until the juice is ready and then cook it for a while.
