Soak the dried mushrooms for several hours in advance until soft.

Stew the chicken into pieces and soak it in water for an hour, changing the water several times to soak out the blood.

Remove and drain.

Put it into a basin, add 2 grams of refined salt, two spoons of Donggu soy sauce, one spoon of oyster sauce, one gram of pepper, two spoons of starch, mix well and marinate for twenty minutes.

Cut onion and garlic into small pieces, slice ginger, and cut green onion into sections.

Adjust bowl sauce: 1 spoon Donggu soy sauce, 1 spoon oyster sauce, 1 spoon cooking wine and stir evenly.

Add an appropriate amount of cooking oil to the pot, and when it is 80% hot, add the chicken pieces and fry until both sides are slightly brown, take them out and set aside.

Use the oil used to fry the chicken pieces, add ginger slices and green onion until fragrant, add mushrooms and garlic and stir-fry for a while.

Pour in the sauce and stir-fry for two minutes.

I switched to a stew pot. Pour the fried sauce into the stew pot, add the chicken pieces, add half a small bowl of hot water, cover and simmer for ten minutes.
