Stir-fried colorful beans
Overview
It’s the season for eating green beans again, so I went to the supermarket and bought some beans. I originally planned to make stir-fried beans, but recently I got very angry, so I thought of a different way to eat them. I saw that there were still green and red peppers, carrots and dried beans left in the refrigerator, so I mixed them together and fried them. I didn’t expect to eat them with fried chicken!

Remove the heads and tails of the beans, tear off the old stems and rinse them thoroughly.

Wash the carrots, green and red peppers, and dried beans and set aside. Tear off the coat of the pork sausage.

Pour half a pot of cold water into the pot, add a drop of cooking oil after the water boils, blanch the beans in the water for 2-3 minutes and then remove them.

Cut beans diagonally into diamond shapes.

Cut carrots and green and red peppers into thick shreds. Because carrots are not easy to fry, I also blanch the shredded carrots (I forgot to take pictures of the shredded carrots when they were blanched).

Cut pork sausage and dried tofu into thick shreds.

Cut green onions into sections, slice green onions and ginger, and cut dry red peppers into sections.

Pour a little cooking oil into the pot

Heat the oil, pour in the dried bean curd and stir-fry until fragrant. Dish out and set aside. The reason why we fry them separately is because the dried tofu and Chinese sausage are salty in nature, so there is no need to add salt when frying.

Add onion, ginger, garlic and dried red pepper and stir-fry until fragrant

Add the previously prepared beans, green and red pepper shreds, and carrot shreds into the pot and stir-fry, add a little salt and continue to stir-fry

Pour in the dried tofu and shredded pork sausage, add a spoonful of light soy sauce and continue to stir-fry. When it is almost out of the pot, turn off the heat and add a little fresh vegetable seasoning.

The hot and colorful stir-fry of beans is ready, and it is delicious and nutritious to go with the fried chicken and rice!
