Bunny Bread
Overview
The first time I saw the bunny bread, I was so cute. My son happened to be sitting next to me. I asked him, "Look, does this bunny bread look good?" The child yelled with joy, said it looked good, and clamored for me to make it immediately for him to eat. He also sang (Little White Rabbit's song), and seeing how happy he looked, I agreed to do it for him.

Make the medium first, pour all the medium ingredients into a basin, mix and knead evenly, and knead into a ball. Cover with plastic wrap and let it grow to 2-2.5 times in size. (Put in the refrigerator at 5°C for fermentation for 17-24 hours, or you can ferment at room temperature)

Put all the main dough ingredients except butter into the bread bucket, then tear the fermented Chinese seeds into small pieces and add them to start the kneading process.

At the end of a kneading process, you can pull out the thick film, add softened butter, and continue the kneading process.

Until the complete stage, a thin glove film can be pulled out. (Kneading the dough will help to remove the film and the bread will taste better)

Take out the dough, roll it into a round ball and place it in a basin covered with plastic wrap for fermentation. Let it ferment at room temperature for 2-2.5 times in size. Dip your finger in some flour and poke a hole if it does not shrink back, indicating that it is ready.

Press the dough to deflate, divide it into 6 equal parts, cover with plastic wrap and rest for 15 minutes

Take a piece of dough and roll it into an olive shape, the longer the better.

Roll over from one side.

Roll up 6 pieces in sequence.

Take a piece of dough and roll it into a long and thin strip, preferably 40 cm long, and then fold it in half.

Add a sausage.

Insert the lower noodle into the hole at the folded point.

Put it all on the gold plate, tidy up the ears, and then slightly trim off the sausages on both sides. Cover with plastic wrap and ferment until it doubles in size. Now the room temperature here is about 35°C, so I don’t put it in the oven to ferment.

On the fermented dough, lightly brush with a layer of egg wash.

Garnish the eyes with red beans, remember to remove them when eating, and preheat the oven to 180°.

Bake in the middle rack of the oven at 180° for 20 minutes. Cover with tin foil as soon as the surface is colored to prevent the color from getting too dark.

Immediately after taking out the oven, place on the grill to cool, then seal and store.
