Eggplant Tofu and Black Fish Head
Overview
My son made a fish, but the guy only ate the fish meat and not the fish head. To be honest, although the fish head was big, it didn't have much meat. It would taste delicious if it was stewed with tofu.

Prepare the remaining fish head, tofu and tomatoes.

Cut the tofu into cubes.

Slice tomatoes and cut cilantro into sections.

Add a little oil to the pot, add Sichuan peppercorns, dried red peppers, green onions, and ginger until fragrant. Add the remaining fish head, add water and salt, and cook over high heat.

Add tofu and simmer.

Simmer until the pot boils for about seven or eight minutes, then add the tomatoes and simmer for another two or three minutes.

Add coriander, pepper, and sesame oil and cook.
