Wash the white radish and cut into pieces.

Chop chives and coriander.

Cut the lamb shank into chunks.

Boil water in a pot, blanch the lamb leg meat, cooking wine, drain, and set aside onion knots, ginger, and dried chilies.

Add water to the casserole and bring to a boil. Add lamb shank, onion knots, Sichuan peppercorns, ginger, dried chili peppers, star anise, cooking wine and pepper noodles and bring to a boil over high heat.

Simmer lamb shank over low heat.

After simmering for an hour, add the radish and salt and bring to a boil over high heat, then simmer over low heat for half an hour.

Stew the lamb leg and radish until tender, then add chicken essence, pour into a soup bowl, and sprinkle with chives and coriander.

Prepare the dipping water seasoning: take a bowl and add dried chili noodles, Sichuan pepper noodles, MSG, fermented bean curd, chives and coriander.
