Wash the duck paws bought in the supermarket and soak them in clean water for half an hour to remove the blood.

Add an appropriate amount of water to the pot and bring to a boil, then immerse the washed duck feet in the boiling water to further remove dirt. After the water boils again, take out the duck feet and rinse them in cold water for later use.

Add water to the pot again, just enough to cover the duck paws. Pour the duck paws into the water, add ginger slices, green onions, peppercorns, aniseed, first-grade fresh soy sauce, cooking wine, and sugar. Start boiling over high heat. After cooking for about 20 minutes, turn to medium heat and cook slowly. Add salt and cook for another 25 minutes. The degree of softness and hardness can be adjusted according to personal preference.

The duck feet that have been cooked for 45 minutes are finally ready. Finally, sprinkle some MSG to enhance the freshness and put it on the plate.

Our family prefers the texture to be softer and not too mushy, so I cook it for a longer time. Personally, I don’t like using a pressure cooker to cook stuff. I always feel that it doesn’t taste as good as the cooked stuff! Just my personal opinion
