Wash and slice the tofu and set aside

Cut the meat into cubes, add onion, ginger, cooking wine and a little pepper and simmer

Cut the tofu into thick square slices with a knife. Heat the oil in a pan until it is 50% hot and fry the tofu slices until both sides are golden brown. Take it out. The 50% oil temperature means that the surface of the oil is slightly warm and fluctuates. The most direct way is to put the chopsticks in the oil. Stir-fry the diced mushrooms, garlic moss and pork in the oil under which the tofu is fried. Add a little water and add the fried tofu. After boiling, add hot sauce (Lee Kum Kee spicy sauce is also available), or hoisin sauce + ketchup, or even better, XO sauce with oyster sauce.
