Dried Cherry Tomatoes and Rosemary Focaccia
Overview
When I first saw this focaccia, I immediately thought that there is a similar focaccia in "The Apprentice Baker" - I am re-reading "The Apprentice Baker" recently. The breads in "The Baker" are exciting, but there has never been any action. As soon as I saw this focaccia, I immediately started dancing. However, there is no olive oil, no black olives, and no dried tomatoes. Although the recipe includes a homemade method for dried tomatoes, even though tomatoes are flooding everywhere, they are not a scarce commodity. However, the dry air and scorching sun are rare things that can bring out dried tomatoes with eight petals that are crunchy when you bite them. Especially with the recent days of erratic moderate rain, it would be wishful thinking to post anything in the sun. Perhaps the oven is a good sunlight simulator, but the yield rate is not high, and it consumes motors and electricity, so I am too lazy to do it even if I think about it. You can buy olive oil and black olives online. I checked some pages as quickly as I ordered, and then stopped. I don’t like shopping so eagerly. I always use many things once and put them aside after I get them back. And tomorrow’s breakfast can’t wait for it. Simply adapt this black olive focaccia into a corn oil and cherry tomato version. Dried cherry tomatoes and their fresh counterparts seem to be relatively easy to obtain. High flour, ordinary flour or a mixture of the two can be used. Then try Fuqiang flour for making steamed buns. It’s just that the amount is a bit large. I would definitely not want to use 450 grams of flour for a baking pan. If you don’t have a small square baking pan, an 8-inch or 6-inch cake mold will also work. Who stipulates that focaccia can only be square and not round? After some calculations, 1/2 the amount can use an 8-inch mold, and 1/3 the amount can use a 6-inch mold. Just use an 8-inch mold - this is the maximum amount acceptable. The plan is finalized and materials are prepared. I went to the nearest supermarket but only found dried cherry tomatoes, so I had to change my plan again. I was a little frustrated, but suddenly I had a new idea, just dried cherry tomatoes! Everything was lacking, except rosemary and flour. While the moon was dark and the wind was high, I picked a few sprigs of rosemary and soaked them in spice oil. Everything went as expected, and the focaccia turned out great in the round cake mold. The only thing that made people frown a little was the dried cherry tomatoes. The sugar content was a bit high and they showed a slightly burnt color under the high temperature.
