Fungus and lotus root slices
Overview
Black fungus is soft in texture, delicious in taste, rich in nutrients, and can be either meat or vegetarian. Lotus root also has high nutritional value. When eaten together, it is delicious and nutritious. Our whole family loves to eat it.

Peel and slice the lotus root, soak the fungus and remove the roots and wash them. I personally think the fungus tastes better after removing the roots, so just a little bit of the root is optional. Cut the green onions and ginger and set aside.

Put cooking oil in the pot, heat it up and stir-fry the green onion and ginger until fragrant, then add the fungus and stir-fry a few more times. The fungus must be cooked before it can be eaten, so put it in the pot and stir-fry for a while.

Pour in the lotus root slices for about two to three minutes, stir-fry together, and add a small half spoonful of vinegar. This is to keep the lotus root crispy, so add less so as not to taste vinegar. Stir-fry for a while and add a little light soy sauce. Stir-fry evenly and then add an appropriate amount of salt. Continue to stir-fry evenly. Because of the lotus root powder, stir-fry the lotus root slices until they are a little sticky and serve.
