Twice-cooked pork is fat but not greasy, and is a great dish to go with rice~~~Compared to the Sichuan version of twice-cooked pork, my version is much simpler and quite homely!

  1. Prepare the ingredients, the chives are not in the photo

  2. Chop onions, white chives, ginger, garlic and small red peppers and set aside

  3. Put the pork belly into the soup pot and cook until it changes color

  4. Cut the cooked pork belly into small pieces

  5. Heat oil in a pan until it is five minutes hot, add onion, ginger and garlic and stir-fry until fragrant

  6. Add onion slices and red pepper and stir-fry for about half a minute

  7. Add the pork belly slices and stir-fry over low heat for about five minutes

  8. After the pork belly is largely oily and brown, add an appropriate amount of light soy sauce and continue to stir-fry

  9. Stir-fry over low heat for about three minutes, sprinkle with appropriate amount of salt and chopped green onion, and serve
