Soak the rice noodles in water for two hours in advance, add cold water to the pot and cook over high heat until cooked.

Immediately pour the rice noodles into a basin of cold water to cool, pour into a sieve and rinse away the mucilage with tap water.

Prepare cucumber flesh, carrots, and green garlic sprouts.

Cut the carrots, cucumbers into shreds, and cut the garlic sprouts into sections. Marinate the meat with soy sauce for ten minutes, add water and starch and mix well.

Boil water in another pot, pour the shredded carrots into the water and cook for a while. This is to cook them faster during frying and avoid being raw.
