Boiled tofu fish
Overview
Boiled vegetables are a dish that I never get tired of eating, and I also love to cook them, especially boiled fish. Every time I cook two-thirds of the fish, I eat it. Looking through my recipes, I found that this is my favorite dish, but I haven’t posted a recipe. I quickly went out and bought a fish, and I made this dish today! There are many ways to cook boiled fish. Today we will use white silver carp to make a delicious boiled tofu fish, which is simple, easy and delicious

One piece of silver carp, remove the scales and internal organs and clean it. Use a knife to slice the fish into thin fillets. Split the head in half and chop the bones into pieces

Cut ginger into pieces

Mix the filleted fish fillets with ginger, cooking wine, salt and bean paste and marinate until ready to use

Chop garlic, green onions, and mince pickled peppers

Add rapeseed oil to the wok, add Sichuan peppercorns and chili pepper segments and fry until fragrant, remove and chop into pieces and set aside

Add oil to the wok, add bean paste, garlic, chopped ginger and pickled pepper and stir-fry until red oil appears

Add broth or water, add the chopped green onions, fish heads and fish bones and bring to a boil

After the water boils, use chopsticks to remove the fish fillets one by one

Add an appropriate amount of salt to the tofu in the pot, simmer over low heat for 15 minutes and pour into the container

Take another pot, add cooking oil and heat it

Pour the cooked fish fillets into the container, sprinkle with fried chopped chili pepper, crushed Sichuan peppercorns, and green Sichuan peppercorns. Pour the hot oil into the chopped garlic and Sichuan peppercorns, and it is ready to serve
