Put the fresh octopus into the bag. Lift the bag and bang it down hard until the octopus stops moving.

Place the dead octopus in the water and clean the suckers carefully.

Add ginger slices to the water in the pot and bring to a boil. Lift the octopus with your hands, immerse the head in the water until it becomes hard, and then let go.

Blanch the octopus until all its feet are rolled up. Cook for two minutes after changing color. Use your hands to pinch the tip of the octopus. If it can be easily cut off, turn off the heat.

Take only the legs of the octopus, keep the head for other purposes (you can make soup or stir-fry), and cut each leg into pieces.
