Overview
Shepherd's purse is a wild vegetable that grows close to the ground. In our place it is usually called local vegetable. During the beginning of spring, this vegetable is mixed with meat filling to make spring rolls.

Remove impurities from shepherd's purse, cut off the roots, and wash them thoroughly.

Prepare pork and spring roll wrappers.

Cut the meat into small pieces and chop it into finer pieces.

Pour in the onion and ginger water and stir well. Add cornstarch, chicken essence, pepper and salt and stir evenly.

Cut the vegetables into small pieces, add a little salt and mix well, squeeze out the excess.

Add clear oil + chicken essence + meat filling and mix well.

Mix 1 tablespoon of flour + water to make a batter.

Place the vegetable filling in the middle of the spring roll wrapper.

Roll it up inward, fold both ends inward, and seal with batter.

All wrapped up in sequence.

Put oil in the pot and fry over medium-low heat until brown.

Drain the oil and serve on a plate.
