The weather is cold and spicy food is more satisfying. Unfortunately, our family eats chili like a bear, so we have to make a slightly spicy version of boiled pork slices

Put the chili and Sichuan peppercorns into a pot and roast them over low heat

Cut the tenderloin into thin slices and marinate it with cooking wine, light soy sauce, egg white and starch for about 10 minutes. Crush the Sichuan peppercorns with a rolling pin and set aside

Blanch the enoki mushrooms in boiling water for one and a half minutes, take them out and place them in a bowl

Put a small spoonful of rapeseed oil in the wok, add an appropriate amount of Pixian bean paste, crushed pepper, chopped Sichuan pepper, green onion and ginger

Slowly stir-fry over low heat until fragrant

Add stock or water and bring to a boil

After it boils, add some salt, pour in the marinated tenderloin slices, stir well and cook for a minute or two

Pour into a large bowl with enoki mushrooms and sprinkle with chopped green onion and chili powder

Heat a tablespoon of oil in another pan

Pour the hot oil onto the chili powder while it's still hot and you're done
