Overview
Guotai tofu is a famous specialty dish in Shandong Province and belongs to Shandong cuisine. Guotai is a unique cooking method of Shandong cuisine. It can be used to cook fish, meat, tofu and vegetables. The tofu is soaked in seasonings, dipped in egg liquid, fried, and simmered in chicken stock over low heat. It is very delicious and can also be called pot-stuffed tofu with stuffing. The finished dish is dark yellow, neat in appearance, delicious in taste, and rich in nutrients.

Cut the tofu into thick slices, sprinkle with a little salt and pepper and marinate for 10 minutes.

Beat the eggs, chop the onion, ginger, garlic and coriander. Add salt, light soy sauce, oyster sauce, chicken essence, pepper and appropriate amount of water to the bowl to make the sauce. Set aside.

Pour cooking oil into the pot and heat it up. Coat the tofu with a layer of dry starch, then add the egg liquid evenly and put it into the pot.

Fry until golden brown on both sides, transfer to a plate and set aside.

Heat the cooking oil in the pot, add the onion, ginger and garlic and sauté until fragrant.

Add the fried tofu and prepared sauce, bring to a boil over high heat, then turn to medium heat and cook until a little soup remains.

Turn to high heat, add a small amount of water starch and sesame oil to reduce the juice.
