Overview
The original Lamington cake has a high amount of sugar. This is my improved Lamington cake recipe, which is low in calories, uses less oil, and is 100% healthy

The eggs are first soaked in warm water at 50 degrees Celsius

Weigh the flour, baking powder and salt

Sieve and set aside

Crack the eggs into a clean eggbeater

Add 100g sugar and beat

Whip until the beaten egg texture does not disappear immediately when you lift it with the whisk head

Add sifted flour

Use a whisk to quickly stir evenly

Mix 25g vegetable oil with 30g milk

Add a little batter and emulsify the oil and milk mixture first

Pour back into the batter and mix well

Pour into an eight-inch baking pan lined with baking paper

Bake in the middle rack of the oven at 160 degrees for 30 minutes

Take out the baked sponge base and let it cool

To prepare the coating sauce, add butter, 45g sugar, 50g milk and 12g cocoa powder to the milk pot
-
Heat over low heat until sugar and cocoa powder are fully dissolved

Cut the dried sponge cake into pieces

Coated with a layer of cocoa sauce

Then evenly wrap it in coconut
