Stir-fried Pork with Salted Mustard Greens
Overview
This year my family has a bumper harvest of mustard greens and cabbage. They are sun-dried and pickled, batch after batch. I have never been to the fields, so I don’t know how many they have planted. If we don’t work hard to eat the amount we have harvested, it might go bad. Salted mustard greens are mustard greens that have been dried, kneaded with salt, and left for a few days to soften and acquire the flavor. Then they are taken out to dry for a while, making them not sour, salty, and crispy.

Soak the salted mustard greens in cold water for about an hour or more in advance.

Wash and cut.

Take some ginger and garlic. It would be better if you add some chili pepper.

Pork, starch, light soy sauce, oyster sauce and dark soy sauce are mixed together. Pork is best either fat or lean.

Heat oil in a pan, add ginger and garlic and sauté until fragrant.

Stir-fry the pork.

Add sugar and a little water and simmer for a few minutes.
