Cut the pig heart into pieces and wash it clean. Add salt and a little white wine to the water and soak the pig heart for half an hour.

Slice the cooked pig heart.

Put oil in a pot over low heat, add Sichuan peppercorns and saute until fragrant. After the Sichuan peppercorns are fragrant, take out the Sichuan peppercorns.

Still add the dried chili rings over low heat and fry until crispy.

Turn on high heat and add chopped onion, ginger and garlic and sauté until fragrant.

Add sliced pork heart and stir-fry.

Add an appropriate amount of light soy sauce and cooking wine, pour in the dried chili rings you just scooped out, and stir-fry again.

Turn off the heat, sprinkle in some scallions, and add an appropriate amount of MSG and salt. Adjust according to personal taste. I eat relatively lightly... (I always add MSG and salt after turning off the fire, because salt and MSG are not suitable for high temperatures. It depends on your own habits)
