Chop the short ribs into small pieces and soak them in water for more than two hours. Remove and drain, add cooking wine, light soy sauce, dark soy sauce, a little salt, ginger juice, mix well and marinate for one hour.

Chop green onions and shred ginger. Pour oil into the pot, add 1 tablespoon of dry starch to the ribs while heating the oil, and mix well.
