Toothpick meat is an authentic Sichuan snack. It is crispy on the outside, tender on the inside, delicious and bright in color. It has different flavors such as numbing, spicy, salty, and sweet. It is very suitable for different people's tastes. It can often be seen in street food stalls or formal dining tables in large hotels. It is also an appetizer, a drink, and one of the favorite snacks for children. Toothpick meat can be made from the lean parts of pork, chicken, or mutton. The lean pork I chose today is closer to Sichuan flavor in taste, but it looks red but not spicy. Even children and the elderly can accept it

Prepare relevant ingredients (I forgot to add the peppercorns)

Wash and drain the lean pork

Put it into a bowl, add salt, sugar, cooking wine, starch, oyster sauce, and cumin powder, and marinate for more than 20 minutes

Fry over medium heat until both sides are browned and turn off the heat

Pick out the drained oil

Leave a little oil in the pot, add Sichuan peppercorns, dried chili peppers and half of the green onions, ginger and garlic until fragrant
