Coat the eggplant with a layer of starch, fry in oil for 5 or 6 minutes

Leave a little base oil, simmer the ginger and garlic in the pan, add the soybean paste and stir-fry. Add the eggplant and continue to fry.

Add green onions and take out the pan. It doesn’t look very good, haha, but it tastes good.
