Summer Refreshing Pumpkin Braised Noodles
Overview
The summer is hot and you are feeling sleepy. Say no to greasy food and have a refreshing pumpkin braised noodles for breakfast. It has the same effect as steamed noodles, but does not require a steamer. Friends who want to eat steamed noodles but don’t have a steamer at home don’t need to worry😄

Bring water to a boil, add noodles and cook until half cooked

Drain the noodles and rinse with cold water. Set aside.

Take half a small pumpkin, clean it, and remove the skin and flesh.

Cut the pumpkin into slices and cut a few slices of young ginger.

Heat a pan, add a little olive oil and sauté the ginger slices until fragrant.

Pour in the pumpkin slices and stir-fry until cooked, add appropriate amount of salt and chicken essence, stir-fry evenly.

Put the very fresh soy sauce into the pot, and then pour in an appropriate amount of hot water to avoid being too salty.

Pour the noodles onto the pumpkin, cover the pot and simmer until the soup slowly dries up.

When the soup is about halfway done, uncover the pot and mix the noodles and pumpkin evenly, then cover the pot and continue simmering until the soup dries up.
