Shanxi Dipi Vegetable Dumplings
Overview
My son likes to eat dumplings with vegetarian fillings. I just ate spinach and egg fillings. This time I decided to try something different and make some dumplings stuffed with ground vegetables. The ground vegetables are called Difan vegetables in my hometown in Shanxi. I only picked them from the grass after summer afternoons. Last year, my mother dried them and mailed some to me. I have been savoring them as a treasure. There is still a small handful left. I will use it to make dumplings this time😊

First, soak the Dipi vegetables in hot water. I used dried Dipi vegetables, then chop them to remove excess water. Pour the tofu in water to make it more elastic. Then wear disposable gloves to grab the tofu. You can also chop it with a knife😄. Fry the eggs in oil and pound the garlic into minced garlic. Prepare all the materials.

Then prepare the pot, put oil in the pot, when the oil is hot, add the minced garlic and stir-fry until fragrant, add the ground vegetables and stir-fry for a minute, then add the tofu and stir-fry, then add the eggs and stir-fry evenly, add salt, five-spice powder, pepper, sesame oil, chicken essence, stir and let cool and set aside.

Pour the flour into a basin, then add an appropriate amount of water and stir with chopsticks to form a fluffy consistency. Then knead the dough with your hands until the dough is smooth. Knead the dough with just three hands in the basin and let it sit for twenty minutes.

Take the dough and dry it into a dough, then wrap the filling. I wrapped it in advance and waited for the children to get off school before cooking it, so I put it in the dumpling box in the refrigerator first.

Add water to the pot. After the water boils, add the dumplings. First push the dumplings from the edge of the pot to prevent them from sticking to the bottom of the pot.
