Wash the beef and cut into thin slices.

When the beef is minced, use the back of a knife to scrape the beef and you can see a lot of fascia.

Continue chopping until you can easily remove the fascia.

Use the corner of the knife to slowly spread the beef from right to left a little at a time, removing the fascia inside.

After removing the fascia, chop the beef into meat sauce.

Cut the lotus root into very fine pieces and add it to the beef (the amount should not be too much, I used half of the amount in the raw material picture). Then take a little ginger and scallion, cut it into very fine pieces, and add it to the beef.

Add 1/2 teaspoon of salt, wear gloves to grasp evenly and stir in the same direction.

Add egg white and water starch and continue mixing.

Add a few drops of sesame oil and beat thoroughly until smooth. (This is too laborious. I took pictures of the steps and gave them to the father to stir.)

Grab a handful of beef sauce with your hands and squeeze out the meatballs with your tiger's mouth. This is not just a matter of squeezing one out. You need to pinch it a few times before squeezing it out. Although it is a bit difficult, as long as you practice more, you will become familiar with it. (I always squeeze balls with my right hand, because I have to take pictures with my right hand, and I have to switch to my left hand to demonstrate, which is really difficult)

Then use the tiger's mouth to retract the ball, seal the cheese, and squeeze it out.

Before putting the meatballs in the pot, boil the water until it is slightly boiling. (In order to avoid the mist of boiling water, I demonstrated how to make meatballs first and then boil water)

Use your other hand to quickly pull the prepared meatballs out of the pot, cook them one after another, and cook until the meatballs are cooked. (There will be a little white foam in the pot when it is cooked. It’s okay, don’t worry. I scooped it out for the sake of clarity in the picture)
