Overview

There are many ways to eat pineapple. It can be used as fruit, in vegetables, and in baked pastries. My favorite is pineapple rice. There are savory and sweet versions of pineapple rice. I especially like the sweet pineapple rice. The combination of the sweet pineapple meat and the soft and glutinous rice makes you intoxicated before you even eat it and smell it! This time I used white glutinous rice and red japonica rice to make pineapple rice. The red japonica rice comes from the first choice of high-quality products---the hometown of longevity in Guangxi: Bama. The red japonica rice here is the best, the soil is fertile, and it is rich in various trace elements for the human body. The high content of manganese, zinc, and selenium is 40 times higher than that in ordinary areas. It has the effects of nourishing yin and promoting fluid, relieving troubles and quenching thirst, strengthening the spleen and stomach, replenishing qi, strengthening the intestines and stopping diarrhea, and is regarded by the locals as a longevity food. The portions of glutinous rice and red japonica rice are equal parts half. After steaming, the color is light red and beautiful. The rice grains are crystal clear and full, which keeps the softness and glutinousness and adds toughness. It is also decorated with pineapple meat, red dates, walnuts, raisins and pine nuts. It smells fragrant and tastes sweet when eaten. Adults and children will love it!

  1. Prepare the required materials

  2. Wash the glutinous rice and red japonica rice and soak them for 2 hours

  3. Use a rice cooker to steam rice (the amount of water is less than steamed rice)

  4. While the rice is cooking, process the pineapple. Cut the pineapple in half and cut the flesh in the middle into a "well" shape

  5. Use a spoon to scoop out the pulp in the middle, then soak the pineapple flesh and the two pineapple cups in light salt water for 10 minutes (this will make the pineapple taste sweeter)

  6. Cut the soaked pineapple meat into small pieces, add the white sugar, chopped red dates, raisins, walnut kernels and pine nuts to the red rice and stir well

  7. Put the mixed pineapple rice into the pineapple cup

  8. Wrap in plastic wrap and steam in a steamer for 15 minutes

  9. After steaming, the rice grows taller again, and the sweet smell fills the room while steaming
