Overview
Gelidium jelly is abundant in southern Shaanxi and is also a favorite of southern Shaanxi people. People in southern Shaanxi love to use peas to make jelly. Because it is close to Sichuan, the cooking method is very similar to Sichuan jelly. I learned from the people in southern Shaanxi how to make this kind of jelly mixed with Gelilium. Prepare the ingredients and soak the Gelidium in cold water until soft.

Wash the jelly and cut into strips.

Add water to the pot and blanch the cauliflower.
