Overview
After seeing it online, I learned how to make dacquoise, a very classic Japanese-style cookie that does not require flour at all. I think the taste is slightly similar to the classic macaron. It is beaten with egg whites and filled with almond powder to strengthen the structure. After baking, it has the sweetness and fluffiness of a protein cookie, but also has the fragrance of almonds!
