A favorite vegetarian dish, (vegetarian stir-fried qianzhang) qianzhang means hundreds or thousands of bean noodles that are spread out and joined together. It is called tofu skin in northern China and also called baiye in the south. It is a special kind of soy food, which is a kind of thin dried tofu slices. It is white in color and can be eaten cold, stir-fried or cooked. Tofu skin itself has no taste, but it is very tolerant. No matter what dish it is cooked with, it will not take away the flavor. Ingredients: Tofu skin (thousand sheets), green chili pepper, red chili pepper, green onion.

Clean all the ingredients: shred the green pepper, dice the green onion, and dice the red pepper.

Wash the thousand sheets, spread them out and cut them into equal pieces, then stack them and shred them.

Boil water in a pot, add a little salt, pour in Qianzhang and blanch it for 2 minutes.
