Sautéed Eggplant
Overview
The stir-fried eggplant is stir-fried with a little bit of minced green onion. Although it is not as silky as the eggplant in a pot, it is spicy and goes well with rice.

Wash the eggplant and cut it into strips (because it needs to be stir-fried, so don’t cut it too big, as it will not cook well and absorb a lot of oil)

Heat oil in the pan, (a little more oil is needed, the eggplant absorbs the oil, more oil will make it more fragrant,)

Add minced garlic and sauté until fragrant, then add minced meat and cut into pieces,

Add soybean paste and stir-fry evenly,

Pour in the eggplant and fry quickly,

After half-cooked, add appropriate amount of chili powder, Sichuan pepper powder and appropriate amount of salt to taste,

Stir-fry until nine times cooked, add half of the chopped green onions and stir-fry evenly over low heat. Place on a plate and sprinkle with the remaining half of the chopped green onions.
