Prepare various ingredients. First, select a piece of fine and tender meat, pure lean meat, cut the meat into small willow leaves, cut the garlic sprouts into 1-inch length, and chop the Chinese cabbage into 1-inch long strips;

Boil cabbage and garlic sprouts in water and do not cook them for a long time;

Stir eggs and starch into a paste, add cooking wine, and mix well with the meat slices. Put the meat slices into a hot oil pan with 90% oil, break them up quickly with chopsticks, and fry until golden brown;

Push the meat to one side, add onion, ginger, and garlic in the oil and saute until fragrant, stir-fry with the meat, add dark soy sauce, vinegar, and salt, and stir-fry for 3 minutes;

Add the watered garlic sprouts, cabbage and fungus together and stir-fry;

Finally add water starch and stir-fry for 2 minutes;

When it comes out of the pan, pour in sesame oil.
