Prepare the ingredients, chop some green onion, peel and slice the spring bamboo shoots, blanch them in water, remove and drain. Soak the sauerkraut in cold water for half an hour, squeeze out the water and cut into 1cm sections. Wash the shrimp skin with water.

Heat 15 ml of olive oil in a hot pan, add the fat and stir-fry until oil comes out. Add ginger, garlic and dried shrimps and saute until fragrant, add pickled cabbage and stir-fry until cooked.

Add the spring bamboo shoots, stir-fry with cooking wine, sprinkle with salt, chicken essence and chopped green onion and stir-fry evenly.
