Overview
In Xihu, a small town near my hometown, the most famous food is mutton stove, which is also a must-eat dish for us every winter. In addition to being a good warming and tonic food, mutton also has the effect of nourishing qi and warming the body whether it is eaten in soup made with traditional Chinese medicine or shredded ginger. This time I first simmered the mutton with Chinese medicine and sand tea to make a mutton stew. The first meal was the staple food, and the second meal I added broth to cook hot pot. Both ways of eating are super satisfying♥

After cutting the mutton into appropriate sizes, boil a pot of water, blanch the mutton until it floats out.
