Pinch the duck tongue lightly with salt to remove impurities, wash and drain

In a pan, add salt, peppercorns, bay leaves, star anise, dried chili peppers, and five-spice powder and stir-fry over low heat

When the salt is heated, a bit of a pungent smell comes out. It’s almost ready. Let it cool down naturally

Stir the cooled salt into the duck tongue, add onions, ginger, and cooking wine, mix well, then seal and refrigerate for 2-3 days

Drain the water from the refrigerated duck tongue, place it on a baking sheet, spread it out, bake at 100 degrees for two hours, remember to flip the duck tongue after about an hour

The roasted duck tongue can be steamed after it cools down naturally. Put water in a steamer, add onions, ginger, and cooking wine and bring to a boil first

Place the steamer with the duck tongue on it, steam it for 15 minutes on high heat, and steam it on low heat for 15 minutes.
