Matcha cheese
Overview
I haven’t made anything for a long time. At the beginning of the month, my classmate asked me to make a matcha cake. She said that she was preparing for a wedding anniversary and she wanted to provide a small jar of matcha powder that cost more than 200 yuan brought back from Japan. She said that her old man likes matcha. Sister, you came to me to make a cake and sprinkled me with dog food? ? I don’t like matcha and I don’t know what to make. Finally, I found a world champion’s recipe and made some changes to get these few leaves. As for why I had to change the recipe, it’s because the cost is so high that it costs over 600 to make an 8-inch one😓

Make the cheese layer by making cream cheese mascarpone. Soften it at room temperature. Add matcha powder, sugar, trehalose, low powder salt and beat until smooth
-
Add egg liquid and beat at low speed until completely combined
-
Beat the light cream until it has texture, add it to the cheese batter and mix well

Pour into the baking pan and bake at 130°C. Because the baking pan for the cake rolls I use is relatively thin and the baking time is infrequent. If I use an 8-inch mold, it will take at least 40 minutes. It depends on your oven. After baking, cut out the shape

Add 45 grams of whipping cream and vodka to the mousse layer milk, then add gelatine powder and heat over water until the gelatine melts
