Pour beef shank into a pot with cold water, add ginger slices, cooking wine and 1/3 onion, bring to a boil and skim off the foam, simmer over medium-low heat for 1 hour, turn off the heat, take out the beef, filter the beef soup and set aside.

Just use half of the beef. Tear the beef into small pieces, add 1 spoon of chili powder and 1 spoon of light soy sauce, mix well and set aside.

Cut 1/3 of the onion into shreds, add vegetable oil to the pot, add onion, scallions, ginger slices and 1 clove of garlic and saute until fragrant.

Add white radish slices and 1 tablespoon chili powder and stir-fry evenly.

Add beef cubes and stir-fry evenly.

Pour in beef broth, add salt, sugar, 1 tablespoon light soy sauce and Korean hot sauce.

Add bracken, oyster mushrooms, shiitake mushrooms and mung bean sprouts and cook for about 5 minutes.

Turn off the heat and add chopped green onion, millet chili rings and cooked white sesame seeds.
