Super simple spicy hotpot with 100% success
Overview
If you want to make spicy hot pot at home with a restaurant-like flavor, all you need is a packet of spicy hot pot base! ps. Don’t use sea food. It’s not easy to use and the flavor is not strong enough. You can add other side dishes according to the amount you like. The total amount should ensure that your wok can operate normally. Basically, one pack of hot pot base ingredients in this amount is enough. Some side dishes that are difficult to ripen (such as enoki mushrooms, potatoes, kelp, shrimps, squid, etc.) should be blanched in water beforehand without cooling them. Other vegetables that are easy to ripen can be stir-fried directly

Ingredients
Steps
-
Wash your favorite side dishes and cut them.
-
Heat the oil in a pan and sauté the garlic over medium-low heat. At the same time, boil a pot of water and prepare to blanch enoki mushrooms, winter bamboo shoots, beef and king oyster mushrooms
-
Fry the garlic until it starts to turn yellow, then add the onion and continue to stir-fry.
-
After the onions are fragrant, turn to medium heat and add the hot pot ingredients.
-
After the hot pot ingredients melt, you can add an appropriate amount of dried chili pepper according to your personal preference for spiciness. If you feel the taste is not strong enough, you can add 1-2 tablespoons more bean paste.
-
Continue to stir-fry, then add mushrooms and shrimp
-
At the same time, take out the blanched enoki mushrooms and other vegetables (except beef) and add them to the stir-fry ingredients. (You can also blanch all the side dishes at the same time, and then stir-fry them together. It depends on your personal taste. I prefer some vegetables to retain their proper texture, so I only blanch the ones that are more difficult to ripen.)
-
Then add other vegetables and stir-fry.
-
Finally, blanch the beef slices, then put the beef slices into the wok and continue to stir-fry. You can add an appropriate amount of sugar to taste according to your personal taste,
-
Stir-fry until the vegetables are all fragrant, then serve. Sprinkle with white sesame seeds and coriander after serving.
-
If the white sesame seeds are raw, use a non-stick pan and bake them slowly over low heat. When the sesame seeds start to turn slightly yellow and the surface becomes oily, you can turn off the heat. Then continue baking them with the remaining heat. Just don't burn them. Take them out and set aside.
