Add egg white, cooking oil, cooking wine, starch, salt and white pepper to the sliced beef, mix well and marinate for half an hour

Heat oil (more oil can be appropriate), cook until 7 minutes cooked, add peppercorns, minced ginger and stir-fry, add minced garlic, bean paste (fry out red oil), add sugar (a little sugar can enhance the taste, but not too much), add water, add light soy sauce, add salt, and an appropriate amount of chicken essence and bring to a boil! Put the marinated beef into the water, cook, remove and place on the blanched vegetables. Remove the ingredients from the soup and discard it. Pour the soup into the bowl with the vegetables (some people like to thicken the soup here, but I don't like thickening, so I don't thicken it). Burn oil (you can use more oil).
