Prepare the side dishes first. My sauerkraut contains (beans, sword beans, radish, lotus root, ginger) and sour peppers. They are all pickled by myself and are relatively crispy

Put the beef brisket in a pot with cold water, add ginger and cooking wine, boil for a minute or two, take them out, drain the water and set aside

Heat the oil in the pan. After the oil is hot, add the ginger, garlic, star anise and grass fruit and sauté until fragrant. Then add the beef brisket and stir-fry for a minute or two. Then add a little rock sugar, light soy sauce and oyster sauce. Add beer, a spoonful of salt, and the water in which the brisket was cooked before. Bring to a boil and simmer over medium-high heat for 30-40 minutes. Heat the water until the water dries out. You can taste it first. If it is not soft enough, add more time

When the beef brisket is almost done, stir-fry the sour chili, sour ginger, garlic, sauerkraut, etc., add some sugar, light soy sauce, oyster sauce, and salt to taste, and stir-fry for a minute or two until soft

When the water is dry and the oil is left, add the fried sauerkraut and chicken powder, stir well, and green garlic to match the color, then you can start eating. Our family likes to eat this dish in winter. You can also use the remaining oil from frying the sauerkraut in the bottom of the pot to stir-fry some vegetarian vegetables with less moisture.
